2020 CSA Week 5

Hi Everyone,

Things are going pretty well at the farm and we're excited about the crops on their way. We harvested the first snow peas and summer squash this week, and the beans don't seem to be far behind! The cabbage, winter squash, broccoli and peppers that were transplanted in the last few weeks are all settling in and starting to grow, and now the game is to keep everything weeded, watered and happy so we can reap the bounty in a little while.

The first week with true summer veggies! Here's to many more!

In Your Bag:

Salad Mix

Beets with Greens

Snow Peas

Summer Squash

Garlic Scapes

Romaine (Large Shares only)

Here are some recipe ideas to try:

1) Roasted Beets with Sauteed Beet Greens

Simple and delicious, this is my favorite way to eat beets.

2) Stir Fry Pork with Snow Peas and Citrus Soy Sauce

This is a recipe from Wegmans that is easily altered. Use chicken or tofu instead of Pork, and add that summer squash from your bag to the stir fry instead of the pepper and this is a perfect use for those garlic scapes! Diced up, they act like a garlicky green onion.

3) Garlic Scapes: A How-to Guide

If you're looking for some more ideas for using those curly, wild-looking garlic scapes, check out this recipe compilation from Bon Appetit. They are so tasty so many ways!

Have a great week! Sarah VanNorstrand
