Week 16

Hi everyone,
Hope you all are doing well. It's been some beautiful early fall weather at the farm, and Sue and Claude have been busy harvesting the bounty of the season. Apples are plentiful this year, so make sure you get out to an orchard nearby to pick some of the best of New York! With the dry weather, Claude cut some more hay and they've been digging potatoes and leeks. So things are going well.

3) Potato & Pepper Pizza
I was at a friend's house recently for homemade pizzas, and the big surprise winner of the night was a pizza topped with thinly sliced potatoes, red peppers and mozzarella. It was amazing! Here's the method- slice a potato as thinly as possible, until they are almost translucent. (A mandoline works well, but be careful of your fingers!!). Saute the potato slices in butter and olive oil until they are browning up a bit around the edges. They will cook longer when on the pizza. Saute the pepper slices until tender. Prepare the pizza dough (here's a recipe for homemade dough- it's very easy!) Brush the dough with olive oil, apply toppings, grate cheese on top and bake! Probably at 450 degrees for about 15 minutes.
4) Lucky Moon Farm Ratatouille
This is Sue's version of ratatouille, and it's easy, chock full of veggies, and delicious.
