Week 11


​Hi everyone,

I hope you had a good week. I was away last week, but I imagine you found delicious ways to use those wonderful vegetables.

Things have been going pretty well at the farm. We've been getting some major weeding projects done, and the crops are generally growing well. The peppers are starting to ripen up, so we should have sweet peppers to give out soon. The new squash is starting to produce, and the tomatoes are ramping up as well. And we should be back to having salad mix in the next week or so.

Please remember to return your tomato and onion containers- We will reuse them or recycle them as needed.

Here are some recipe ideas to try:

1) Caribbean Vegetable Stew

Here's another great Moosewood recipe that uses that cabbage, hot peppers, cilantro, onions. and tomatoes. Yum!


2) Marinated Green Beans with Cilantro and Garlic

Here's a different way to do up those green beans, and uses some of the cilantro for a different flavor profile.


3) Baingan Bharta

I love this Indian treatment of eggplant- it's delicious! Great with Basmati rice and naan.


4) Lucky Moon Ratatouille

This is a great way to layer those eggplant, summer squash and tomatoes with bread crumbs and parmesan cheese.
