Week 2

Hi everyone,
I hope you're all doing well. We're back up and running with the CSA, and we used the week off in between to get all sort of things planted! We had some nice sunny days and got a whole lot done including planting the potatoes, beans, greens, tomatoes, peppers, eggplant, cucumbers and winter squash, as well as a whole lot of weeding and bed preparation. So thanks for your flexibility!

We have some nice spring greens and veggies for you this week, which we hope you'll enjoy!
In Your Bag:
Salad Mix
Spinach
Arugula
Radishes
Beet Greens
Rhubarb

Here are some recipe ideas to try:
A simple vinaigrette sets off the zingy flavor of the arugula.
Maybe you're a radish fan, maybe you're not (I'm not super into them) but either way, you should try this recipe! I had it at a camp once, and it was very tasty and a different approach to the humble radish.
I love rhubarb, and it's delicious in these muffins, but check out the website for more recipes for rhubarb pie, rhubarb crisp, rhubarb bread... so many ways to enjoy. My personal favorites will always be strawberry-rhubarb and blueberry-rhuabarb (aka bluebarb) pies.
Have a great weekend!
All the best,
