Week 2

Hi everyone,
It's week 2 at the farm and things are looking good! The peas are flowering (so it won't be long till it's pea-pickin' time) and the beans are up and the peppers are all planted and seem to be flourishing. We've had some rain, but nothing too torrential, so all-in-all, June is progressing nicely. Of course, it's a bit early yet for us to see any of the produce from those crops, but it's something to look forward to.

This week is all about greens! We have some lovely salad, and some nice zippy arugula and beet greens as well. It's amazing to me how different all those little leaves can taste! Beet greens are mellow and earthy, while arugula is hot and peppery. And then there's all the different kinds of lettuce, each with their own texture, color and flavor, and that's not even getting into kale, chard, collards or any of the asian greens. So while we're eagerly waiting for the first peas, carrots, and zucchini, for now, the greens are front and center.

So greens for salads and possibly cooking. I'll include some recipe options below. And then a small herb sampling that could accentuate some of the meals you make this week.
Here's a nifty way to use Arugula! Tasty tossed with pasta!
This is a great salad, as the sweetness of the peaches help counter the spiciness of the arugula.

Here's a simple way to cook beet greens to accompany a main dish.
