Week 6

Hi everyone,

Another week, another newsletter, another bag of veggies! I hope you all are doing well and enjoying the summer weather. The heat is on again today, but I'm all for it in July! It finally feels like a proper summer. Great for swimming, camping, cook outs and picnics. I hope your summer schedules are full of ways to enjoy the weather and the season.

Things are progressing at the farm, but the crops are definitely ripening later than usual. We did spot the first zucchini yesterday, and the peas are finally starting to come on. The potatoes have been hilled, the winter squash uncovered, and the hoop houses for the late broccoli and cauliflower have been moved to their new location and will get planted in the next few days. I love farming in the summer! There's always so much to do, and each day is different, full of it's own challenges and rewards.


Today the bluebirds were singing away and looking interested in setting up house in one of the empty bird boxes above the flower garden. So beautiful! I love their song- it's so sweet.


​​Also, I wanted to let you know that Lucky Moon will be participating in Madison County's Open Farm Day this year, on Saturday, July 29th.


If you've never participated in Open Farm Day, it's a great way to spend a Saturday! You can drive around beautiful countryside, stop at farms producing all sorts of food and goods, and get a chance to talk with the farmers directly!


It's a great behind-the-scenes tour of farming in Upstate NY. I highly recommend it.


​S​​o, if you've wanted to stop by and see Lucky Moon Farm, or bring some friends to show them where some of your food comes from, it's a great way to do it.


We'll be there to show people around, explain our farming techniques, and do our best to answer your questions.

1) Mahi Mahi Al Forno with Soy & Scallions

If you're thinking of putting fish on the menu this week, this looks like a tasty, easy recipe from Wegmans. Of course, they want you to buy all their brand-products, but feel free to use other items...


2) Cod with Beet Greens & Lemon Vinaigrette

Another fish recipe from Wegmans- looks tasty!


3) Lime Cilantro Rice

Here's one from Allrecipes.com. It looks like a handy way to zest up your rice!


Ingredients:

2 cups water

1 tablespoon butter

1 cup long-grain white rice

1 teaspoon lime zest

2 tablespoons fresh lime juice

1/2 cup chopped cilantro

Directions:

  1. Bring the water to a boil; stir the butter and rice into the water. Cover, reduce heat to low, and simmer until the rice is tender.

  2. Stir in the lime zest, lime juice and cilantro into the cooked rice just before serving.
